John Claude’s Eight Course Premium Hot Lunch Buffet
At John Claude Corporate Catering, we specialize in premium hot lunch buffets for the office, delighting clients with an array of our tempting and palatable signature cuisine. Perfect for larger groups and events, our hot lunch buffet includes a variety of delectable food choices, which have been expertly fashioned so all of your guests can indulge in their favorites.
Each premium hot lunch buffet catering order includes a deliciously cold antipasto platter, freshly baked dinner rolls, Chef’s homemade assorted cookie platter, grated cheese and complete paperware sets.
We invite you to also choose one salad, one pasta, two entrees (groups of more than 40 choose three), one starch and one vegetable.
Total cost per person: $24.95 (minimum of twenty people; price subject to seven percent sales tax)
- Bruschetta Salad – Organic Greens, Chopped Bruschetta, Feta Cheese & Candied Walnuts
- Mixed Green Salad – Baby Greens, Vine Ripe Tomatoes, Red Onion, Fire Roasted Peppers & Black Olives
- Caesar Salad – Crisp Romaine Lettuce, Shaved Reggiano Parmigiana Cheese & Rustic Croutons Points
- Arugula Salad – Baby Fresh Arugula, Green Apple Slices, Red Onion & Pecans
- Homemade Lobster Ravioli – lite pink cream sauce
- Homemade Portobello Mushroom Ravioli – mushroom port wine sauce
- Penne Vodka & Jumbo Shrimp – served with white gulf jumbo shrimp
- Tri Color Cheese Tortellini Romano – lite cream sauce with peas & Prosciutto Di Parma
- Home Gnocchi – made with ricotta cheese & parmigiana very lite and served in a Bolognese Sauce
- Cavatelli – with sweet Italian sausage & broccoli rabe lite garlic broth
- Stuffed Chicken – stuffed with Prosciutto Di Parma, fresh asparagus tips, fire-roasted red peppers & fresh mozzarella served in a brandy cream reduction
- Chicken Mimosa – layered with fresh sliced Jersey tomato, prosciutto Di Parma, & melted mozzarella topped in a lite brown sauce.
- Chicken Sorrentino – layered with baby eggplant, sauteed baby spinach & melted mozzarella served in a Marsala wine reduction
- Chicken & Shrimp ala JohnClaude – Boneless breast of chicken & jumbo shrimp sauteed with prosciutto di Parma, scallions & chopped tomato served in a brandy reduction
